Easy 1-Bowl Banana Muffins

I’ve found a simple, no fail way to bring a little joy to my day and home: make a batch of muffins. These delicious one-bowl muffins are quick, easy, and healthy. Bonus? They use up the sad looking bananas in my fruit bowl that I can’t bear to throw away.

If you don’t like baking because of the mess, this recipe is for you. These muffins are made in one bowl, and you can even get away with reusing one Pyrex 1-cup measuring cup for nearly every dry ingredient. Reduce your clean-up time even further by investing in silicone muffin pans. No more frustration scrubbing crusty bits out of tiny crevices and wondering why you wanted to make muffins in the first place.

With ingredients that are wholesome and healthy you’ll feel good about having a plate overflowing with these muffins on the counter. You can even make them gluten-free by swapping the flour, and if you want to up the health ante even further add a cup of grated carrot. Plus with only a half cup of sugar and a little maple syrup they have just the right amount of sweetness to get kids to eat them…without being sugar bombs.

While I’m a far cry from Martha Stewart, I once had a friend tell me that every time she stops by my house I have freshly baked muffins. I swear that I’m not baking in the kitchen 24/7, but with this recipe you too will be whipping up muffins on a whim.

1-Bowl Banana Muffins

(inspired by this Minimalist Baker recipe)

2 eggs
¼ cup olive oil
2-3 mashed bananas
¼ cup maple syrup or honey
½ cup brown sugar
½ tsp sea salt
1 ½ tsp baking soda
½ tsp ground cinnamon
½ cup milk or almond milk
⅔ cup rolled oats (I prefer quick oats)
½ cup almond meal
1 cup regular or gluten free flour
Optional (choose one):
½ – 1 cup blueberries
½ – 1 cup grated carrot

Preheat the oven to 350 degrees. Put all of the ingredients (with the exception of the optional ingredients) in a bowl and stir until well blended. Add your chosen optional ingredient, if using. Spoon into a greased muffin pan/cups, or a silicone muffin pan. Bake mini muffins for 10 minutes, regular muffins for 15 minutes. Enjoy!
